Opening in May 2024, Skof has quickly gained quite the reputation as a restaurant that delivers excellence, skill and simplicity. Chef Tom Barnes delivers thoughtful, ambitious yet down to earth dishes that celebrate seasonality and maximise the joy of flavour. We’re really grateful to have a great relationship with these lovely folks.

At both Balance and Skof we share a love for seasonal ingredients, treated and prepared with care that fit harmoniously to showcase the best of one another. Together, we’ve paired freshly foraged pine tips from Cartmel in the Lake District with a blend of barrel aged beer to bring you a release that tastes fantastic on it’s own and pairs wonderfully with food.

We chose a blend of beer from two different barrels that complemented and lifted each other before steeping the pine tips and infusing the blend with their unique character. They spent just over a week in contact with the beer before packaging with champagne yeast to bring zippy effervescence.

The base blend brings fruity funk and acidity, underpinning the pine character. You'll find notes of earthy dried lime, chamomile and rainy autumnal woodland. The flavour builds as you drink and finishes with a soft resinous bitterness. We can’t wait to see how this beer ages and develops.
