Inspired by the flavour contributions of oak to our beer, we wondered whether different parts of the tree could be used to bring interesting, complex flavours. The answer? Yes, they can!

The acorns, picked from James' parent's garden, were dry-fermented for 12 months before being added to the beer. They bring soft vanilla and intriguing nuttiness alongside Amontillado sherry notes. There is a subtle savoury finish with fruity funk, champagne dryness and hazelnut.
